This veggie platter has been my go-to holiday appetizer because it looks stunning and everyone loves the fresh crunch.

Ingredients

  • Vegetables: 1 medium head broccoli cut into florets, 1 medium cucumber sliced into rounds, 1 cup cherry tomatoes, 1 yellow bell pepper sliced, 1 red bell pepper sliced, 1 cup sugar snap peas, 2 medium carrots sliced into sticks
  • Decoration & Garnish: 2-3 black olives halved (for ornaments), 1 slice yellow bell pepper cut into a star shape (for the tree topper), small bunch fresh parsley (for garnish)
  • Dip (optional): 1 cup hummus or ranch dip (serve on the side)

Instructions

Step 1:
On a large rectangular platter or cutting board arrange broccoli florets in a triangular shape to form the tree.
Step 2:
Layer cucumber slices in rows to create a garland effect across the tree.
Step 3:
Evenly scatter cherry tomatoes bell pepper slices carrot sticks and snap peas to mimic ornaments and branches.
Step 4:
Place the yellow bell pepper star at the top of the tree.
Step 5:

Step 6:
