I first served these salted caramel pretzel brownie bites at a family gathering and they were an instant hit everyone kept asking for the recipe

Ingredients

  • For the Brownie Bites: 115 g (1/2 cup) unsalted butter 170 g (1 cup) semisweet chocolate chips 100 g (1/2 cup) granulated sugar 50 g (1/4 cup) light brown sugar packed 2 large eggs 1 tsp vanilla extract 65 g (1/2 cup) all-purpose flour 20 g (1/4 cup) unsweetened cocoa powder 1/2 tsp salt
  • For the Salted Caramel: 100 g (1/2 cup) granulated sugar 2 tbsp water 60 ml (1/4 cup) heavy cream 30 g (2 tbsp) unsalted butter 1/2 tsp flaky sea salt
  • For the Topping: 40 g (about 1 cup) mini salted pretzels roughly crushed Extra flaky sea salt for garnish (optional)

Instructions

Step 1:
Preheat your oven to 175°C (350°F) Grease a 24-cup mini muffin tin or line with mini paper liners
Step 2:
Melt the butter and chocolate chips together in a heatproof bowl over simmering water or in short bursts in the microwave Stir until smooth Let cool slightly
Step 3:
Whisk in the granulated sugar and brown sugar until combined Add eggs and vanilla extract mix well
Step 4:
Sift in the flour cocoa powder and salt Fold gently until just combined
Step 5:
Spoon the batter evenly into the prepared mini muffin cups filling each about 3/4 full
Step 6:
Bake for 1618 minutes or until set and a toothpick inserted comes out with moist crumbs Cool in the tin for 10 minutes then transfer to a wire rack
Step 7:
While brownies cool make the caramel In a small saucepan combine sugar and water Heat over medium swirling gently (do not stir) until sugar dissolves and turns deep amber 56 minutes Remove from heat carefully stir in heavy cream (mixture will bubble) Add butter and salt stirring until smooth Let cool for 5 minutes
Step 8:
Spoon or pipe a small dollop of caramel onto each brownie bite Top with crushed pretzels and a pinch of flaky sea salt if desired
Step 9:
Allow caramel to set before serving
